Brookies are a one of a kind dessert. Unique in many ways, this delectable treat has the classic and notable chewiness of a brownie coupled with a slight crispiness and fluffiness of the cookies
Has anyone even heard of brookies? Based on my highly precise census, chances are no. But that’s ok because to day you will find out and instantly fall in love with them at first bite.
The best combination of a brownie and a cookie!

A COUPLE HELPFUL TIPS
Brownies
Coconut Butter: The original recipe used vegan butter, but I preferred to use a more whole food source, so I opted for coconut butter. Feel free to try the vegan butter.
Coconut Milk: The batter will be quite thick, like cookie dough, so don’t be afraid to add extra milk if you are unable to properly mix it. But just ensure that the batter is still as thick as cookie dough.
Add-ins: The original recipe calls for add-ins, but I did not want to take away from the rich brownie flavor, so I opted out.
Cookies
Oil (Coconut Oil): When I first made these cookies, I thought that they were a bit oily. If you feel the dough might be too oily to put with the brownie batter, omit some and substitute with coconut milk.

Ingredients:
Brownies
1/4 cup coconut butter*
1/4 cup + 2 tbsp. natural cane
1 flax egg (1 tbsp. flaxseeds + 3tbsp. water)
1/2 tsp vanilla extract
3 tbsp. nondairy Milk
1/4 tsp + 1/8 tsp baking powder
1/8 tsp sea salt
1/4 cup dutch-process cocoa powder
1/4 cup + 2 tbsp. all-purpose flour
Ingredients:
Cookies
1/4 cup coconut oil
1/3 cup sugar**
1.5 Tbsp maple syrup
3 tbsp coconut milk
0.5 Tbsp pure vanilla extract
0.5 tsp baking powder
1/4 + 1/8 tsp baking soda
1/4 tsp salt
1 cups all-purpose flour
chocolate chips***
Directions:
1. Mix all brownie ingredients together in a large bowl
2. Put brownie batter in baking dish****
3. Mix all cookie ingredients together in another large bowl
4. Place cookie sized chunks of dough onto the brownie batter
5. Spread the dough out to create a somewhat even layer
6.Bake for 20-30 minutes*****
7. Let cool and slice into 8 -10 brookies
Notes:
*I used coconut butter, but feel free to use vegan butter – just omit the 3 tbsp. of coconut milk*
**For the cookies I used `1/2 coconut sugar and half cane sugar to ensure that the cookies are were not too light or too dark**
***I just eyeballed the amount I wanted, but made sure that some were still visible at the for presentation***
****My baking dish had a strange measurement, 8.7″x4″x2.4″****
*****I left a bigger range for baking time just incase you like a gooey or cake like brookie, I baked mine for 25 minutes*****
