
Ok, it’s been one… two… three! months since I have last posted! But, I must say, I am feeling a little low on energy. It’s a Saturday. So…not make something that looks delicious, is easy to make, and tastes like more! These Cranberry Cashew Energy Bars just hit the spot. They are delectable and, as previously mentioned, taste like more- these will keep you running back to the refrigerator for many more.
These are a fantastic no bake treat, and they are kinda like my Orange Chocolate Fudge.
As pictured above these energy bars are shaped as bars, but I more frequently place them in these molds.
Just 3 essential ingredients…well 4 if ya wanna be boujee like me!
Recipe
- 1 cup of dates (around 9-12)*
- 1/2 – 3/4 cup of cashews
- 1/2 cup of dried cranberries**
- 1/4 – 1/2 tsp. of salt
Directions
- add dates to the food processor, and blend until they form a dough like consistency
- take the date paste out, and pulse cashews in food processer until they are crumbled
- add the date paste back in and pulse a couple times to mix
- add in cranberries and salt and then pulse again
- take out mixture and press into desired molds***
- This should fill about 14
Notes
- depending on how soft and large your dates are, you may need less or more*
- I like mine chopped- just cuz it’s smaller (chopped or whole, it does not make much of a difference)**
- The first time I made these, I pressed the mixture into a glass Pyrex dish and then cut them into squares. I would recommend pressing the mixture in to smaller molds.***
