Orange Chocolate Fudge

When I first had the idea to do something with oranges, it was the middle of hot June. I knew I wanted a treat that was still chocolate-y, but had a fresh undertone, so I went into the kitchen and began experimenting. As with all of my other creations, there were many trials and many errors. Nevertheless, I was able to create a recipe, that not I only enjoyed, but my family did too. Although these sweet bites have no animal products, they do contain a fair amount of nuts, so be careful when serving these near someone with a nut allergy. But, without further do, let’s get to makin’ this simple treat!

DESCRIPTION:

These fudge squares are not like your typical fudge: completely creamy. But instead, they are ultra fudgey and accented by the crunchy texture of the nuts. This fudge is perfect for a light snack, being on the go, or a rich dessert!

RECIPE:

  • 1 cup pitted Medjool dates
  • 1/cup chopped nuts
  • 2 -3 tbsp. cocoa powder
  • 1 tbsp. orange rind
  • 1 tsp. vanilla (optional, but recommended)
  • 1/4 tsp. salt (optional)

INSTRUCTIONS:

  1. blend dates in a food processor until a sticky dough is formed
  2. add nuts, cocoa powder, orange rind, vanilla, and salt -blend until combined
  3. press fudge into lined Pyrex dish**
  4. freeze for 30-60 minutes
  5. cut into desired sized pieces
  6. Enjoy

*Based on the size of dish used

**I used a small 2 3/4 in. x 4 in. square glass dish.
